I love Moosewood cookbooks. We have already tried a number of recipes out of this one, and they are all fantastic. They are rarely quick, because the focus is on fresh ingredients, which tends to mean lots of vegetable chopping (it is also almost totally vegetarian), but the results are totally worth the effort. Even the vegan (read – no eggs) chocolate cake was delicious.
